I know my blood sugar will be messed up later today. And maybe for tomorrow. Possibly for a couple days. Simply because I will not take it easy on the maple syrup today.
I like maple syrup. I consider it one of nature’s great gifts. And today is one day I can revel in it’s sweet, sticky goodness. By eating pancakes and drowning them in maple syrup.
I know. It’s supposed to be all about the pancakes today. But I can’t help myself. And it’s not that I don’t like pancakes. They can be quite tasty. And there are numerous variations of the pancake.
Pancakes are rather versatile. You can add a lot of different things to pancakes. Many people will throw in a few blueberries. Some may add chocolate chips. Maybe even bananas. Or bananas and chocolate chips. Other fruit can work well too. I’ve even tossed in a few cranberries from time to time, which add a nice bit of tartness to balance out the sweet. I even came across a recipe for Scotch pancakes. That had me intrigued, until I discovered that they don’t contain any actual Scotch. But they do have cinnamon, which sounds like an interesting addition.
But I tend to take my pancakes straight up. Just pancakes. So I can truly savour the taste of the maple syrup. It is our national tree… sort of. We should enjoy it.
And since many of us have been trying to recover from the over indulgence of the holidays but cutting back on the sweets a bit, pancake day is the perfect excuse to indulge just a little.
There is a Maple Syrup Day, but that’s in the middle of December, when the sap isn’t running and we already have plenty of other sweet stuff to distract us. I don’t know who thought that was a good idea.
But Pancake Day is just at the right time. Pass the syrup.
